100% Arabica Coffee with selected coffee beans from around all the major coffee growing regions. There are coffees from South and Central America, East Africa, India and the Asia Pacific Rim making this one of the most complex blends of coffee available. One of the arts to blending successful coffees is optimising the origin characteristics of each of the coffees to make a balanced blend and one of the key elements to this is marrying naturally processed coffees which are more naturally sweet in their flavour profile with fully washed coffees that are more naturally clean.
Forming 40% of the blend and therefore the base, is the Brazil coffee from the Mogiana coffee growing region situated to the north of Sao Paulo. Grown at altitudes of around 1000 meters the micro climate has moderate rainfall and sunlight throughout the year with an average temperate climate of 20 Degrees Centigrade. The soil is a rich red volcanic type and is ideal for growing high quality Arabica Coffee. The coffee from Mogiana is a naturally processed harvest with ripe, red coffee cherries laid out on sun decks for several days before being milled. This gives the coffee a natural sweetness to it and complements very well with the washed coffees from other parts of the world that can be found in the blend. The coffee also has great body with juicy fruitiness and mild acidity.
Forming 20% of the blend are fully washed Arabica coffees which are sourced from Honduras, the largest producer of fully washed coffees in Central America. Over 92% of all the coffee farmers in Honduras are small holder farmers and ours is sourced from the western department of Copan near the border with Guatemala under the canopy of the lush, fertile rain forests, all of which are meticulously hand-picked to ensure only the ripest fruits cherries are picked. The warm days and cool nights of western Honduras, combined with fertile soil and fresh mountain air, make a splendid place to grow coffee. The coffee itself is smooth and well balanced with an aroma of brown sugar and tastes of ripe, red fruits.
Again forming 20% of the blend is the exotic Arabica coffee from southern India, grown at altitudes of up to 1,500 meters in highlands of Karnataka under monsoon rainfall conditions and hand-picked by small holder farmers and their families. The average small holder farmer has less than 4 acres of land and this fully washed coffee is tended to under a thick, lush rain forest canopy and inter-cropped with cardamon, cinnamon and clove. The coffee is smooth and mellow with hints of vanilla.
Ethiopia is recognised as the birth place of coffee and we have sourced a classic Arabica coffee from the famous Great Rift Valley - the Sidamo coffee growing region - a lush green paradise and generally regarded as some of the finest coffees in the world. The small-holder farmers prize their coffee crop carefully hand picking the ripest cherries. The sheer varieties of Heirloom Arabica coffee found here make the Sidamo coffee diverse and wonderfully complex. Floral and sweet citrus aromas abound and flavours such as chocolate and fruit berries can dominate.
The wild frontier that still remains today, Papua New Guinea lies just 160km north of Australia and forms part of a mountainous arc that spans from Asia, through Indonesia and into the Pacific. With a colourful, vibrant culture, PNG is made up of over 600 islands and 800 indigenous languages! Our fully washed Arabica coffee is sourced from the Western Highlands growing region and hand picked by small holder farmers. The result is a mild, aromatic coffee with a clean flavour and balanced acidity.
